    Binging with Babish why don’t you so much like Ricotta cheese with Lasagna or ziti ?? I’m curious. Also my one friend agrees with you, but sense it has always been in both my families recipes I personally think it belongs.

    YOU MESSED IT UP....OMG YOU FUCKED IT! YOU HAVE TO BROWN THE BEEF WITH THE ONIONS AND GARLIC GOES LAST...WHAT THE HOLY FUCK!!!! MY MOM WAS ITALIAN, I AM HALF...THIS IS HOW IT IS DONE! AND YOU DRAINED OFF ALL THE OIL....GEEZE....your making me sad. but we used tomato paste too, after the meat BROWNED WITH THE ONIONS...we added the garlic last...cause if it cooks too long, it smells, like cat piss..and i would only guess tastes of it too.. we also added basil, parsley, oregano, small amout of thyme, and if needed a small amout of sugar, to pull the TOMATO TANG OFF IT...also we slow cooked it for 2-3 hours, and let it set on very low heat for another 2-3 until ready to serve... and it was alway 10 times better the next day, when all the flavors came out. the soprano book messed it up.

    I can’t stand ricotta cheese in anything but in my lasagna and occasionally in my baked ziti, I use the Boursin garlic and herb cheese spread. It is delicious and still gives you that slightly creamy layer just packed with a ton more flavor.

    You add sausage and meat to the onions because they're going to benefit from it, flavourwise. In my national kitchen we do it with every meal, and when I watch other nations cook, I always scream ''COOK THE ONIONS AND MEAT TOGETHER'' (ofc you first caramelize the onions)
