You don't need beer to create a batter. By the time you fry in 375 degrees oil any outer flavor is fried out. You can easily use carbonated water, and some use plain water for good results. And if you're wondering where the panko breadcrumbs are, he doesn't use them much to my dismay. I mean, if you're going to make deli onion rings, you must at least use regular breadcrumbs, but I prefer more the panko style crumbs, but suit your taste, and watch your waist.

I think you can make jumbo muffins with it too and omit the frosting. And I like the shortcuts she took and not the usual sift flour stir in baking powder soda set aside blah blah. Just stir it right in. Gorgeous and fluffy crumb. I was drawn to the recipe because my daughter brought them home from a church Sunday coffee and I couldn’t believe how fluffy and delicious they were. You can fold in blueberries or snipped dried apricots too. I think I will skip the frosting as they are delicious enough without it and just as pretty imo. A little lemon or orange zest would be nice too depending on fruit used.

I've been spatchcocking for a while now and the last one I did my wife ate more of it than I did. She even ate the back which I thought I had hidden. Yes, I cook the back too. I used a rub mix of salt, black pepper, cumin, cinnamon, Italian seasons, Turmeric, cayenne pepper. I put most of the mix under the skin and what was left over on the skin. After that I used a knife to punch holes in the meat and skin. The drippings was used to make a gravy.

Reading comments is essential. "The little bit of water surrounding the CLARIFIED butter will cause food to fry or saute unevenly and cracked." REPLY TO COMMENT MADE OF, "Pouring melted butter into cold water will separate the butter." THIS changes the chemical composition of the molecules in the clarified butter. "The little bit of water around it will saute/fry unevenly and cracked."

This is a good vid. The skimmed butter can be used for mashed potatoes, etc., not throwing it away - don't waste anything or don't make anything waste. Many times when I melt butter, I hold the pan above the flame after the butter starts to melt. Placing the pan of unmelted butter atop a pot of boiling water, is also a good way to melt butter, but time consuming - unless water is boiling for pasta, etc.
