Went to our local Pak Foods but was told they can't get ab ghooreh any more (sanctions on Iran perhaps?), so will follow your advice and use red/white wine vinegar as a substitute. Interestingly they sold us hing (asafoetida) as a substitue - any thoughts about using it in your recipe? Thanks Howard

I observed an elderly lady in rual Mexico prep her "Jaro" (clay pot) with a clove of garlic rubbing it only on the outside then placed it on a very hot wood burning stove stated her granny taught her this method when she was a young child. Amazing. We can be countries apart BUT we are so alike.

Every time I've had Beef Rendang at restaurants it's always been prepared a bit differently, as you mentioned. Had no idea that the turmeric leaves were utilized in cooking - taught me something new. The Kaffir lime leaves are tough for me to get here unless I order by mail. Never heard of Kerisik either but all this food talk has got me hungry! Regulating the oil temperature is difficult. Too hot browns them too quickly. I’m looking for the magic touch on this. I only do a couple at a time to keep them from browning too fast.
